In the glass, the wine reveals a deep, dark red core that fades gracefully to garnet-tawny edges. The nose is rich and brooding, offering a multilayered bouquet that unfolds with each swirl. Ripe plum and dark berry compote sit at the heart, wrapped in earthy undertones and subtle toasted oak. Notes of dark chocolate and truffle emerge next, grounded by an alluring spice that hints at cinnamon bark and clove. It’s a complex and evolving aromatic profile that reflects both the power of the Barossa and the elegance of old vines, over a century in age.
On the palate, this wine delivers with unmistakable authority, full-flavoured, concentrated, and mouthfilling from the first sip. Layers of dark, ripe fruit glide across the tongue, supported by the savoury earthiness so intrinsic to these ancient vines. There’s a beautiful interplay between richness and restraint: blackberry and mulberry give way to notes of dried herbs, and a hint of leather. The oak is seamlessly integrated, lending both structure and length. Mocha and charry oak tones build through the mid-palate, adding warmth, depth, and complexity. This is a wine of substance and character, bold yet finely tuned, with length that lingers well after the final sip.
Hand – tended. Pruning and picking are performed manually to protect these precious old vines. The Shiraz was hand picked on the 3rd March and the Mouvedre a month later on the 8th April. Each variety is made separately and respected as its own entity throughout the entire winemaking process until blending prior to bottling. Held in 60% new American oak and 40% seasoned for 36 months. This style is a homage to the traditional winemaking methods of the Barossa Valley.
Fermentation. Traditional open fermenters. 10 days on skins. Twice daily pump overs. Cellaring. Temperature controlled cellaring for 10-15+ years will reward with more complexity.
