The Gourmet Entertainer Fennel Masala Jam- Local Adelaide Hills Produce

As part of a community collaboration with local Barossa producers (and some local regional producers) we have asked them to submit recipes that they love.

The Gourmet Entertainer produce a range of condiments that are ingredient rich and contain no fillers, enhancing a “cleaner” taste and product integrity. All products gluten free and colours are natural, made with natural preserving techniques. Provenance and Origin is high on their agenda and their commitment is to the local food industry. Teresa has shared a recipe which would make a great mid week meal or nibbles for a dinner party.

Mushroom and Fennel Masala Jam Flatbread Pizza

Ingredients
100g Fennel Masala Jam
160g white onion, very thinly sliced (1 onion)
300g sliced fresh variety mushrooms or equivalent dried
1/2 teaspoon chopped fresh rosemary/ oregano/ thyme
1/2 teaspoon sea salt, divided
3 gluten free whole seed flatbread (I used B-Free 5 Wraps Quinoa & Chia Seed)
100g fresh part-skim ricotta cheese
15g garlic, minced
100g shredded low fat cheese

Preheat the oven to 200 degrees Celsius. Prep time: 12 minutes Cooking time: 24–26 minutes. Reserve 2 tablespoons Fennel Masala Jam.

Coat the mushrooms in the rest of the Fennel Masala Jam and put aside.

Brush the entire top surface of each flatbread with the reserved Fennel Masala Jam. Toast in the oven for 5 mins. In a small bowl, stir together the ricotta, garlic, and spread mixture onto the flatbread, leaving about a ¼-inch rim. Top with the mozzarella cheese, and mushroom mixture.

Place pizzas on a large baking sheet and bake until the cheese is fully melted and the crust is crisp, about 13–15 minutes. Remove from the oven. Let stand for about 5 minutes to complete the cooking process. Cut each pizza into 4 pieces, and serve immediately.
