Fierce III 2019 Cabernet Sauvignon

At the heart of our winery is family, the seed from which all else grows. The power of three, combining our strengths and passion to make memorable wines. We honour our heritage, embrace the present and toast to the future. Live Fierce!
The 2019 growing season was dry through winter and spring and it continued that way until harvest, producing lower yields, with lots of varietal definition.
Grown on the Estate vineyards, at Rowland Flat in southern Barossa Valley. Sourced predominately from our Winery block. The vines are planted in 1995 on a single wire trellis managing yield to low/moderate and facilitating dappled sunlight to the fruit critically important to Cabernet Sauvignon to achieve tannin ripeness.

Colour: Black cherry, with vibrant garnet hues.
Nose: Varietal aromas of Cassis, blackcurrant and red berry fruits. Hints of spice and toast from the American oak.
Palate: Intensely varietal Cabernet Sauvignon flavours on the palate. Full bodied, harmonious with upfront fruit characters and cocoa tannins that fan out from beginning to finish. Savoury notes of black olive and chocolate give length and structure to the wine.
Making: This wine was fermented at 25-28C in stainless steel tanks for 7-10 days and pumped over twice daily. Optimum skin contact married with 100% American oak maturation with 75% new oak for 29 months. A strict regime of bi monthly barrel topping to support the tannin evolution was employed. Managing tannin extraction from the fruit and oak is paramount in Cabernet Sauvignon to ensure a wine of structure and length without harshness or overt dryness.

Wine Enthusiast 2022, USA – 92 points “Extravagant on the nose, this wine smells like stepping into a shower of baking spice. Mulberries, ripe cherries and popping-fresh blueberries soar from the glass, too. The palate is hedonistic, carrying along all the same flavors and adding concentrated notes of toast and vanilla. Full-bodied but not overpowering, this is nicely balanced by sculpted tannins and seamless acidity. The finish is all lush fruit. This will please many a palate preferring voluminous, rich wines. Drink now–2025.”

Ray Jordan, The West Australian – 92 points “Nothing is spared in this traditional Barossa cabernet sauvignon. Opens with a mix of cherry and leafy blackcurrant on the nose. There’s a slightly Cherry Ripe character that is appealing. The palate has a dry savoury thread with the oak and tannin management excellent. This is all American oak with about 75 % new. After fermentation it stays for 29 months in oak. The power and weight of the fruit takes the oak easily achieving balance. It’s generous full bodied and a power laden flavour pack. Cellar: 12 years”

Wine Showcase Magazine 2021 – 90 points

Shanteh Wale, Quay Restaurant Head Sommelier – “Ribena cordial and dried black cherries with coconut curls and vanilla pod. A glossy coffee syrup and hints of tabacco and leather this wine shows the hallmarks of toasty oak, olive and rosemary. The wines dry and grainy tannins shows its Cabernet frame and promise. A wine that is bold and assertive and showcasing the spice and high-quality American Oak. Drink with spiced meats like beef vindaloo or Lamb korma.”
